Mediterranian Greek Chicken Bowl

These bowls are a feast for both the eyes and the plate, combining tender, marinated chicken with a balance of fresh, crisp vegetables and a tangy tzatziki sauce. When it comes to my meals, I love to have it all mixed up in a bowl, so that I can get a little bit of everything all in one bite! It just brings the meal to another level for me. For someone who doesn’t mind their food touching, this meal is for you. My favorite thing about these bowls is you can get the juicy, tender chicken, the fresh rainbow of vegetables, and the zesty tzatziki sauce all together. The flavors complement each other perfectly and explode like fireworks in your mouth. This meal is perfect for meal prepping, but in that instance, I would advise keeping the vegetables in a separate container so that when heating back up your chicken it doesn't ruin that freshness.

Ingredients:

  • 4 sweet potatoes, diced and roasted at 425F

  • 1/2 punnet cherry tomatoes

  • 1/2 cucumber (sliced)

  • 1/2 red onion (sliced)

  • feta cheese

Chicken Marinade:

  • 6-8 boneless skinless chicken thighs

  • 2 tbsp olive oil

  • 1 tsp cumin

  • 1 tsp oregano

  • 1/2 tsp thyme

  • 1/4 cup parsley

  • 4 cloves garlic, minced

  • 1/2 lemon zested and juiced

  • salt & pepper

Tzatziki:

  • 1 cup plain greek yogurt

  • 1 garlic clove, minced

  • 1/2 cucumber, shredded

  • 1 tbsp fresh thyme or dill

  • 1/2 lemon, juiced

  • 1 tsp olive oil

Instructions:

  1. Combine olive oil, cumin, oregano, thyme, parsley, garlic, lemon, salt, and pepper in a bowl and stir together. Add chicken and put in the fridge

  2. Preheat oven to 425 F. Dice your potatoes, and season with salt, pepper, and olive oil. Add to a baking tray and bake for 25 minutes or until crisp.

  3. To make the Tzatziki sauce combine yogurt, garlic, shredded cucumber, fresh thyme/dill, lemon, and olive oil and stir together. Set aside in the fridge

  4. Heat a skillet to medium-high heat and add a drizzle of olive oil. Add your chicken face side down and cook for 5-7 minutes each side so that it is nice and crisp and set aside.

  5. Add your sliced cucumber, onion, and tomatoes to a bowl, add your chicken and sweet potatoes, and garnish with tzatziki sauce and feta cheese. Enjoy!
