Mediterranian Greek Chicken Tray Bake

The chicken crisps up beautifully, while the veggies roast to tender perfection, soaking up all the flavorful juices. Ingredients:
3-4 boneless skinless chicken thighs
2 Tomatoes
1/2 red onion
2 bell peppers
1 zucchini
Two strands of cherry tomatoes
Handful of black olives
Sprinkle of crumbled feta cheese
1 lemon sliced
Handful of chopped parsley
Tzatziki sauce
salt and pepper
Instructions:
Preheat oven to 400F.
Roughly chop your veggies and throw them into a baking tray. Drizzle with olive oil, salt and pepper.
Season your chicken with salt and pepper and place on top of the vegetables. place in the oven for 30-35 minutes, and then broil for 5 more minutes to get it nice and crispy.
Garnish with lemon wedges, feta cheese, black olives, and parsley!
