Pistachio Crusted Salmon

This is the first salmon recipe I ever created and it is still without a doubt my favorite! Salmon is probably the seafood that is cooked the most often in my household so I cannot fathom that this recipe is the real deal. With it taking less than 30 minutes in total this meal is simple and is drool-worthy delicious. The nuttiness from the pistachios mixed with the lemon garlic flavor works wonders when combined. It took some trial and error, but here it is!

Ingredients:

  • 3 salmon filets

  • salt & pepper

  • 1 lemon juiced

  • lemon zest

  • 3 cloves garlic minced

  • smoked paprika

  • olive oil

  • 1/4 cup pistachios chopped

Instructions:

  1. Preheat your oven to 425F

  2. lay your salmon on a baking sheet, season your salmon, add garlic cloves, lemon juice and zest, olive oil, and chopped pistachios. bake for 7-10 minutes enjoy!

I love pairing this salmon with sautéed broccolini, quinoa or rice, and avocado!
