Mexican Inspired Ground Beef Skillet

As fall continues to settle in, I am excited to share another of my favorite fall recipes! There is something truly special about this season - the warm spices and the comforting meals always seem to bring people together. This recipe is perfect for those crisp evenings when you are craving something savory and delicious. This meal combines the savory taste of ground beef with the freshness of colorful bell peppers, hearty black beans, and juicy tomatoes. It is topped with a light sprinkle of cheese, creating a comforting and satisfying dish. Plus, it’s another one-pan dish, which is always a win in my book!

Ingredients:

  • 1 lb ground beef

  • 2 bell peppers (any color)

  • 1 can black beans, rinsed and drained

  • 1 can whole peeled tomatoes

  • 1/2 large red onion, chopped

  • 2 cloves garlic, minced

  • 1/2 cup shredded cheese

  • 1 cup bone broth

  • 2 tbsp olive oil

  • salt and pepper

  • 1 tsp paprika

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1/2 tsp ground cumin

  • 1 1/2 tsp dried oregano

  • 1/2 tsp dried thyme

  • Optional, fresh cilantro and lime wedges for garnish

Instructions:

  1. In a large skillet over medium heat, add your olive oil and saute your bell peppers and onion until translucent (5-6 minutes)

  2. Remove bell peppers and onion from the pan and set aside, add in your ground beef and cook until brown (3-4 minutes)

  3. add your salt, pepper, paprika, onion powder, garlic powder, cumin, oregano, and thyme and mix through for another minute

  4. Add your veggies back into the pan, with your black beans, tomatoes, and garlic. Stir all together and then add your bone broth to the skillet. Simmer for 15-20 minutes.

  5. Garnish with shredded cheese, cilantro, and lime wedges, and enjoy!
