Fall Harvest Bowl
There’s no better way to celebrate the season than with a warm, nourishing fall harvest bowl. If you love chicken, brussels sprouts, and sweet potatoes paired together, this meal is for you! At the heart of any good harvest bowl is a mix of ingredients that reflects the season of fall. Think root vegetables like sweet potato, carrots, beets, etc. When you roast these veggies they become even more delicious, caramelizing and enhancing the flavors to perfection. Using kale as the base for this recipe may cause some to be skeptical, but I promise it will not disappoint. Not only does it provide a nutritious foundation, but messaging the kale reduces its bitterness and softens the texture. For the protein source, I went with curried chicken as it adds a punch of flavor that complements the fall veggies perfectly! You can grill, sauté, or bake the chicken - whichever method you enjoy! So gather up all of your ingredients, and enjoy the best of fall all on your plate!
Ingredients:
3 boneless skinless chicken breasts
1 bunch of kale, chopped and stems removed
2 medium sweet potatoes, chopped into 1-inch squares
1 cup brussels sprouts, halved
3 large carrots, chopped
1/2 red onion, evenly chopped
3 tbsp olive oil
1 lemon
1 tsp curry powder
1 tsp garlic powder
salt & pepper
Instructions:
Preheat oven to 400 F convection
Toss all of your chopped veggies with salt, pepper, and 2 tbsp olive oil, and add to a baking tray. (Tip: leave the baking tray in the oven while it’s preheating as it will add some crispiness to the veggies). once the oven is ready to go, bake for 40-50 minutes
In a large bowl, add the chopped kale. Drizzle with the remaining 1 tbsp olive oil. Add garlic powder, juice & zest of 1 large lemon, and salt. Gently massage the kale until it wilts and becomes tender.
Season your chicken with the curry powder and a touch of olive oil, and bake for 20-30 minutes, or until it reaches an internal temperature of 165F.
For plating, start with your base of messaged kale. Top with roasted vegetables and sliced curried chicken. Enjoy!
Additional toppings: If desired, sliced avocado, nuts or seeds, and a fresh squeeze of lemon juice are a perfect garnish for this bowl:)
