Warm Stovetop Oatmeal
As the mornings have gotten colder and colder, I have noticed myself falling back to this classic oatmeal recipe to warm me up — nothing beats a cozy bowl of oatmeal. First, half of a ripe banana is added during cooking, melting into the oats as they simmer in the milk. Ingredients:
1/2 cup rolled oats
1 cup almond milk (or milk of your choice)
1/2 ripe banana, sliced
1/2 tsp cinnamon (plus more for topping)
1 egg white

Instructions:
In a small saucepan, bring almond milk to a simmer. Add in your rolled oats and cinnamon.
Add the banana slices, mashing them somewhat into the oats as they cook.
After 3-4 minutes, add in your egg white, whisking quickly to absorb into the oats. Cook for an additional 2-3 minutes until the oats are fluffy and thick.
