Grilled Steak Salad

As much as I love chicken you can’t go wrong with a good cut of steak, and I have found that pairing it with light, nourishing vegetables creates a delicious balance that is perfect for an easy lunch or dinner. If you are craving something hearty but still fresh, this Grilled Steak Salad is your answer. I got into grilling steak a few months ago and it has become a weekly staple for my family and me. This juicy, perfect steak is paired with crisp greens, ripe cherry tomatoes, and a sprinkle of feta to give it that pop of salty goodness. The combination of textures and flavors is what makes this dish a standout - and paired with a rich balsamic glaze adds just the right amount of tangy sweetness. This meal feels light and healthy, but is just filling enough to keep you satisfied!

Ingredients:

  • 1 lb ribeye or sirloin steak (or your preferred cut)

  • salt & pepper to taste

  • handful of spinach

  • 5-6 cherry tomatoes halved

  • 1/2 cucumber quartered

  • 1/4 cup feta cheese crumbles

    For the balsamic dressing:

  • 1/4 cup balsamic vinegar

  • 1 tbsp honey

  • 1/2 tsp dijon mustard

  • 1/3 cup extra virgin olive oil

  • salt & pepper to taste

Instructions:

  1. Remove the steak from the fridge and let it sit at room temperature for around 20 minutes before grilling — this helps it cook evenly

  2. Season the steak generously with salt & pepper on both sides

  3. Preheat your grill to medium-high heat. Grill the steak for 4-5 minutes per side for medium-rare, or longer depending on desired doneness.

  4. Once cooked, transfer the steak to a plate and let it rest for 5-10 minutes. After resting, slice the steak thinly.

  5. While the steak is resting, assemble your salad. Prepare your base with spinach, top with cucumbers and tomatoes, add the steak, and then garnish with feta crumbles. Finally, dress your salad with the balsamic dressing and enjoy!
