Honey Mustard Baked Chicken

I love anything with chicken, and there is something irresistible about the tangy and sweet combination of honey and mustard — it goes with pretty much anything! This honey mustard baked chicken is a simple, comforting dish that will always deliver bold, elegant flavors with minimal effort. Pairing this with crispy potatoes and vibrant, garlicky broccolini makes for a perfectly balanced meal that is sure to impress.

I found that using chicken breasts for this particular recipe was more successful than using chicken thighs — something that I did not expect. Due to the longer cooking time that thighs require, no matter what I did to try and compensate for that, the sides would always come out dry and overcooked. But once I tried it with breasts, it all finished cooking at the same time and it tasted delicious! As much as I love chicken thighs, they just were not up to snuff on this one!

Ingredients:

For the Chicken:

  • 2 boneless, skinless chicken breasts

  • 3 tbsp Dijon mustard

  • 4 tbsp honey

  • 2 tbsp olive oil

  • 3-4 garlic cloves, minced

  • 1 1/2 tbsp fresh rosemary, minced

  • 1/4 tsp each salt & pepper

For the Potatoes:

  • 5-6 baby gold potatoes, halved

  • 1 tbsp olive oil

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Salt & pepper

For the Broccolini:

  • 1 bunch broccolini

  • 1 tbsp olive oil

  • 1 clove garlic, minced

  • Salt & pepper

  • pinch of red pepper flakes

Instructions:

  1. Slice your chicken, and add it to a bowl with mustard, honey, olive oil, garlic, rosemary, salt, and pepper. Let it marinate for at least 30 minutes.

  2. Preheat the oven to 400 F. Chop your potatoes and add them to salted boiling water for 5 minutes. Drain into a colander and add to a baking sheet. Add your olive oil, paprika, garlic powder, onion powder, salt, and pepper, and add to the oven and cook for ~40 minutes.

  3. Add your chicken and broccolini to a greased baking dish and bake for 20-25 minutes.

  4. Once everything is done cooking, serve immediately and enjoy!
