Greek Turkey Burgers

I love burgers just as much as the next person, but I feel like turkey burgers don’t get enough credit - they are rich in protein and when combined with the right ingredients, make for a delicious Greek-inspired main. Packed with Mediterranean-inspired ingredients like feta and fresh herbs, they make for the ideal blend of savory and satisfying. I have loved experimenting with ground turkey and have found that in my opinion, leaner ground turkey tastes better than fattier ground turkey. You might be thinking to yourself: “Won’t it just be dry and bland?”, but I am happy to say that it is not! By incorporating ingredients that are rich in moisture, like onions and egg yoke, plus the creaminess of the feta, each bite is packed with flavor and texture. I love plating these burgers in a “bowl-like” way by surrounding them with complementary flavors like roasted vegetables, fresh avocado, or chopped apple. I implore you to give these a go!

Ingredients:

  • 1 lb98% lean ground turkey (my preferred amount of leanness)

  • 1/2 cup crumbled feta cheese

  • 1 egg

  • 2 cloves garlic, minced

  • 1/4 cup chopped red onion

  • 2 tbsp fresh parsley, chopped

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • Salt & pepper

  • 1 tbsp olive oil

Instructions:

  1. in a large bowl, combine the ground turkey, egg, crumbled feta, chopped onion, chopped parsley, minced garlic, oregano, thyme, salt, and pepper. Use your hands to mix everything until well combined - be careful not to overwork the meat.

  2. Divide the mixture into 4-6 portions, depending on the desired size, and form into patties.

  3. Heat a pan over medium-high heat and add olive oil. Press the patties down gently in the center to help them cook evenly. Cook the turkey burgers for 5-6 minutes per side, or until the internal temperature reaches 165 F. Make sure they are golden brown and juicy and enjoy!

    Tip: Make sure not to overcook the burgers — ground turkey can dry out if overcooked, so make sure to monitor the temperature.
