Sage Apple Roasted Chicken Breasts

It goes without saying that the recipe name for this dish is not simple, but that’s not the point. The point is this dish has a lot of steps but most of them are easy - they require the right timing. These tender but juicy chicken breasts are elevated with a sweet and savory flavor, fresh apples, thyme springs, and aromatic sage leaves. The chicken is first seared to give it that golden brown look and then roasted to perfection. The apples caramelize so gracefully and meld with the sage and thyme. You end up with a dish for a cozy weeknight dinner or a special occasion. My mom has said time and time again that this is her favorite recipe that I have created, and I don’t blame her. It combines her favorite things, that being apples, chicken, and most importantly, wine!

Ingredients:

  • 3 boneless skinless chicken breasts

  • 1 large apple (Honeycrisp recommended)

  • 2 shallots sliced

  • 4 cloves garlic (2 minced, 2 quartered)

  • 12 sage leaves

  • 8 thyme springs

  • 1/2 cup red wine

  • 1/2 cup apple cider vinegar

  • 1 tbsp Dijon mustard

  • Salt&pepper

  • Olive oil

  • 2 Tbsp butter

Instructions:

  1. Preheat oven to 400F and heat olive oil and butter in a pan over medium-high heat.

  2. Salt & pepper chicken and sear on both sides until golden brown. (about 3-4 minutes)

  3. Turn off the heat and take the chicken out of the pan, adding in your sliced shallots, apples, garlic, and 4 thyme leaves.

  4. Add the chicken back into the pan and place into the oven for 15 minutes.

  5. Remove the pan from the oven and set aside chicken, shallots, and apples.

  6. Add in cooking wine, apple cider vinegar, mustard, sage leaves, and the rest of the thyme leaves.

  7. Stir and bring to a boil, reduce to a simmer, adding the chicken, shallots, and apples back into the pan, and cook until the chicken reaches an internal temperature of 165F. Enjoy!
