Banana Oatmeal Bites

I know breakfast is not for everyone, but at least for me, it is the most important meal of the day. If I don’t have a delicious and satisfying breakfast, I can’t function. And these Banana Oatmeal Bites are quick, easy, and make for the perfect breakfast! They are great for meal prep if you're on the go, or for a casual morning where you just want to relax. These are a take on traditional muffins but they are a little bit different texturally and ingredients-wise. Instead of flour, here I used oats and bananas as the binders, so they also are great if you're looking for gluten-free options. What’s also very appealing about this recipe is how versatile you can be with the toppings. If you want chocolate chips, top it with some chocolate chips. If you want some blueberries, go for it — it will taste even better. All in all, these are a great thing to have prepped in your pantry, ready to start your day right!

Ingredients: makes ~9

  • 2 ripe bananas

  • 1 cup oats

  • 1/2 cup almond milk (Or your milk of choice)

  • 1 egg

  • 1/2 cup maple syrup

  • 1 tsp vanilla

  • 1 tsp baking powder

  • Salt

  • Optional Toppings: your choice of fruit or chocolate chips

Instructions:

  1. Preheat your oven to 350F.

  2. Combine all of your ingredients into one bowl and mix until well combined.

  3. Pour into lightly greased muffin tins and top with your fruit or choice or chocolate.

  4. Bake at 350F for 20~25 minutes, or until golden brown, firm, and when inserting a toothpick it comes out clean. Store in an air-tight container and enjoy!
